Cacao (Theobroma cacao) is a tree native to the Amazon basin, cultivated in tropical regions worldwide. The pods grow directly from the trunk and main branches, a phenomenon called cauliflory. Each pod contains 20 to 60 seeds surrounded by a white, sweet pulp. Harvesting is done manually with machetes or pruning shears, picking only ripe pods to ensure quality.

After harvesting, the pods are opened and the seeds are fermented for 5 to 7 days, a crucial process that develops chocolate flavor precursors. They are then sun-dried for about a week.
