Unlike almost all other houses, Salon produces champagne only in exceptional vintages, making each release a rare and highly anticipated event. Since its founding, only about 40 vintages have been released.

The wine is fermented in stainless steel tanks, without oak, to preserve the purity and minerality of the terroir. After fermentation, the champagne ages on the lees for a very long period, often over 10 years, before being disgorged.
